Pantry to Plate Project

In partnership with nutrition students at the University of Minnesota, Open Cupboard and Today’s Harvest have some recipes that use ingredients commonly found at our markets.

A message from the nutrition students:

Our partnership with Open Cupboard and Today’s Harvest aims to empower shoppers through simple, budget-friendly, and culturally inclusive recipes designed to make the most of pantry ingredients. Our recipes are tailored to the unique inventory of Open Cupboard and Today’s Harvest and each month, we’ll feature three new recipes on this page and in their monthly newsletter, offering fresh ideas for transforming pantry staples into delicious, balanced meals.


Why does our project matter?
Our project is more than just recipes, it’s about building a more sustainable food pantry community. Our project shows you how to make the most of what you already have on hand, whether it’s fresh, frozen, or shelf-stable, while also introducing creative ways to enjoy seasonal produce and pantry staples. By making the most out of every ingredient, we help reduce food waste, stretch resources further, and support sustainable food practices. We know cooking can sometimes feel overwhelming, especially when working with unfamiliar or limited ingredients. That’s why we’re here to help you build confidence in your cooking skills and turn what you have into meals you’ll love.
